This baked potato slice burger is so simple and delicious to make. Far less fuss than making a veggie patty from anything else. Just pile on your favorite produce and condiments.
Peel potatoes, and from middle, cut large slices, about 1/4 inch thick. Cut any remaining ends into potato wedges. These can be used for spicy baked potato wedges.
Bake on non-stick tray in 350 F for 30 min. Use spatula to flip potato slices, and bake another 10 min. Should be nicely browned.
While slices are baking, prepare the buns. Slightly toast the whole wheat buns. Dress buns tops with mustard and ketchup. Add produce like onions, tomato, pickle and lettuce to bun bottoms. When slices are done, add to buns and cover. Serve hot.
Let the slices to cook and brown on the bottom before you try to flip them. You can bake spicy potato wedges at the same time.
